The fighting games are the follow-up to 3 and 4.
3 and 4 are each self-contained stories, so it's totally fine to skip around.

The fighting games are billed as an epilogue, but nothing really progresses story-wise, so you can safely ignore them.
They just briefly touch on what the Persona 3 cast does after graduating.

For the RPGs, just start with the Persona 4 remake coming out soon.
Each game's story stands on its own, so pick whichever world appeals to you.
