What I don't get is this mindset of 'they probably secretly want to play it but are stubbornly holding back.' If someone won't play a game they could just play on their phone, the only explanation is 'they're not interested' — there's nothing more to it.

Monster Hunter Rise's characters run 20,000-30,000 polygons, so quality-wise Genshin could run just fine on Switch — assuming you actually had proper optimization behind it, of course.
It's an open world that's already implemented 7 nations with over 100 playable characters, so it'd blow way past Switch specs, easily.
They're up there on PC too, but PC has plenty of its own mainstream free titles.
