Depending on the species, pufferfish toxin can be in the "skin" or even the "muscle (flesh)" too, so it's not just about avoiding the innards. Guess it's only going to get more complicated from here. And the sashimi looks so pretty and tastes so good…

Plenty of countries eat it — South Korea, China, Singapore, Indonesia, Hawaii, Australia, New Zealand. It's apparently just that Japan and South Korea are the only ones who eat it raw as sashimi.

Apparently aconite (wolfsbane) poison acts as a counter to pufferfish toxin. I forget which is which, but one raises your pulse and the other lowers it, so used correctly they can supposedly cancel each other out.

Isn't pufferfish toxin something they just absorb and accumulate from their diet in the first place?
Forget hybridization — if their food changes because of environmental shifts, wouldn't the toxicity itself change too?

In fact, I'm pretty sure there's farmed pufferfish that's been made non-toxic by exploiting exactly that.

Pufferfish chef licensing requirements vary by prefecture — I believe in Osaka you used to be able to get one just by taking a course.

I wonder if sea bream (tai) and pufferfish could ever hybridize. Or maybe, if sea bream absorbed pufferfish genes and their cells gained resistance to the toxin, they'd start accumulating the toxin produced by plankton in their own bodies as a defense against being eaten — and end up becoming a highly toxic fish just like pufferfish. Building up a defensive poison in your body so you don't get eaten works against humans too, you know. And if the toxin turned out to be heat-resistant, you wouldn't even be able to can it.
