If the iPad could fold, it'd fit in a small bag — now that would actually be convenient.
Between iPhone and iPad, Apple ships way, way more iPhones, so that's where the priority is

Fold it vertically and Tetris or other falling-block games would be great. Fold it horizontally and it's perfect for reading, like a Kindle.
The vertical-fold ones are seriously unpopular, basically dead in the water at this point
Tablets are honestly a pretty niche, in-between product now, squeezed between laptops and phones with bigger screens. They might just fade away eventually.

Back then it wasn't two screens, just one screen plus buttons, so it wasn't that pricey. Two screens basically means double the phone. You'd need Nintendo DS-level mass production to bring costs down.
The iPhone fold looks like it'll land a good screen ratio, so no worries there
