My grandma was, unusually for her generation, chasing a hardcore career ("bari-kyari") and was a terrible cook, but my grandpa never once said it tasted bad.

Actually, my mom's cooking was pretty rough too —
there'd be lumps that never dissolved, and after she got fancy with the ingredients it ended up with this weird smell baked into it

I remember being blown away the first time I had curry from a chain restaurant back in middle school

Since the roux goes in last, making a spicy batch and a mild batch is easy — I bet the real problem wasn't the spice level, it just tasted bad in general

Sauté the onions until soft, add the carrots and meat, pour in water, bring to a boil, add the potatoes, skim the scum while simmering 20 minutes, turn off the heat, then melt in the roux

Well, Noel from Oasis has apparently testified that out of all the curry he's eaten around the world, the only bad one was in Tokyo. Guess it can't be helped that Japanese curry is bad then
